Smoked Gouda Potato Gratin

- Medium pot
- 2-cup casserole dish
- Mandoline slicer
Ingredients
- 12 ounces yukon potatoes, peeled and sliced
- 2 slices smoked gouda, torn into pieces
- 4 fluid ounces cream
- 2 green onions
- Pinch of salt
- Pinch of black pepper
Directions
- In lightly salted water, bring potatoes to a boil, then simmer until softened, 5-7 minutes.
- Drain water, return pot to medium-high heat.
- Add cream and green portions of green onions. Bring to a boil, then remove from burner.
- Stir in half the gouda, salt, and a pinch of pepper.
- Transfer potatoes to oven safe 2-cup casserole dish. Top with remaining gouda.
- Bake in oven at 400°F for 18 minutes. Serve!
