Ingredients
- 2 pounds ground beef
- 1 pound ground pork (try substituting ground chorizo)
- 1 large onion, chopped
- 2 cubes Crockpot Curry
- 2 eggs
- 1 cup quick oatmeal
- 1 teaspoon salt
- 1 teaspoon pepper
Topping
- 2 tablespoons brown sugar
- 2 tablespoons mustard
- 1/3 cup ketchup
Directions
- Mix all ingredients. Create two loaves, one to cook now, and one to freeze.
- Place the first loaf in a baking pan, add half the topping, and cook in the oven at 350°F for one hour.
- Place the second loaf in a freezer safe bag and store away.
- Remove meat loaf from oven, add remaining topping, and cook for an additional 10 minutes.
- Let stand for 5 minutes, then cut into slices and serve.
