Ingredients
- 4 ears corn cob
- 1/4 cup mayonnaise
- 1/4 cup cotija cheese, grated
- 1 tablespoon herb butter
- Pinch of salt
- Pinch of black pepper
Directions
- Soak ears in salted water for 1 hour.
- Peel back husk, remove silk.
- Cover each ear with a dollop of mayonnaise, then sprinkle with cotija cheese. Put husks back in place.
- Grill for 10+ minutes on medium-high heat, rotating as needed.
- Remove from grill, cover with herb butter, salt, black pepper, and more cojita cheese. Serve!
