- 2 zucchini
- 2 roma tomatoes, diced
- 2 green onions
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1 teaspoon basil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon lemon peel
Directions
- Trim zucchini ends, halve lengthwise, and cut at an angle into 1/2" pieces.
- Trim and cut white portions of green onions into 1" lengths. Thinly cut green portion at an angle, keep separate.
- Add olive oil to a medium-high heat skillet, then add zucchini. Still occasionally until browned and tender, 3-5 minutes.
- Add tomatoes and white portions of green onions. Cook until tomatoes are tender, 2-3 minutes.
- Stir in salt, basil, garlic powder, and lemon peel. Remove from burner. Top with green portion of green onions. Serve!
