Pork Apple Cider Pie

Ingredients
- 2 cups S2 Pulled Pork
- 2 lb 4 oz Creamy Mashed Potatoes
- 3 tablespoons olive oil
- 1 red onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons sage, chopped
- 1 teaspoon fennel seeds
- 1 1/3 cups apple cider
- 2 granny smith apples, peeled, cored, and cubed
Directions
- On stovetop, heat skillet, add oil, onion, garlic, sage and fennel. Cook for 3 to 5 minutes.
- Add pork to pan, pour in the cider, and let boil for 2 minutes.
- Combine with apples and transfer to baking dish. Season with salt and pepper.
- Add mashed potatoes on top the pork and apple mixture. Bake at 375°F for 15 minutes.
- Top with parsley and serve.
