Ingredients
- 1 rib roast
- 1 tablespoon virgin olive oil
- 1 tablespoon freshly ground salt
- 1 tablespoon freshly ground pepper
Directions
- Rinse and pat the rib roast dry with a paper towel.
- Coat with a small amount of olive oil, then season all sides with salt and pepper.
- Place on v-rack in refrigerator, air-drying (dry-brine) for up to five days.
- Cook in oven on v-rack at 150°F for 6-8 hours, until roast reaches a minimum temperature of 120°F.
- Remove roast from oven and tent in foil for 30 minutes to 1 1/2 hours.
- Cook roast uncovered in oven at 500°F for 10 minutes to crisp the exterior.
- Carve and serve!
