- Whole beef brisket, including both flat and point sections, 10 - 16 lbs
Rub
- 1/2 cup kosher salt
- 1/2 cup coarse pepper
Directions
- Trim the fat on the brisket, and remove the web-like membrane.
- Rub the brisket with copious amounts of course salt and pepper, then let rest at room temperature for 1 hour.
- Cook indirect for 4 to 5 hours at 275°F degrees, until the internal temperature reaches 150°F.
- Wrap in tinfoil or butcher paper.
- Cook indirect for 2 to 4 hours more at 275°F, until the internal temperature reaches 206°F.
- Remove from heat, let rest for 1-3 hours, then cut against the grain and serve!
