Ingredients
- 10 fingerling potatoes
- 2 ounces cheddar cheese, shredded
- 1 ounce bacon, crumbled
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Directions
- Slice fingerling potatoes in half, lengthwise.
- Toss with olive oil, salt, and black pepper.
- Spread potatoes on sheet pan in a single layer, cut side down.
- Cook in oven at 425°F for 10 minutes.
- Remove from oven, flip potatoes cut side up. Sprinkle with cheddar cheese and bacon crumbles.
- Cook in oven for an additional 10 minutes.
- Remove and serve!
