Creamy Chickpea Prosciutto

Ingredients
- 4 thin slices of prosciutto
- 15 ounces of chickpeas
- 2 large eggs
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 tablespoons tomato paste
- 1 teaspoon smoked paprika
- 1 cup heavy cream
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon rosemary
Directions
- Heat skillet to medium-high, then add olive oil.
- Add garlic to hot pan. Cook 1-2 minutes .
- Add chickpeas, tomato paste, and paprika. Stir often until coated, about 1 minute.
- Mix in cream, season with salt and black pepper. Bring to a simmer.
- Crack eggs into mixture. Season them with salt. Cover and cook until egg sets, about 2 minutes.
- Remove from heat and add prosciutto. Crumble rosemary on top, sprinkle with salt and black pepper. Serve!
