- 4 sandwich buns
- 4 slices pepperjack cheese
- 2 chicken breasts, cut in half
- 2 cups frying oil
- 8 slices pickle
- 4 slices tomato
- 4 leaf lettuce
Marinade
- 1/2 cup pickle juice
- 1/4 cup water
Egg Wash
- 1/2 cup milk
- 1 egg
Breading
- 1 cup all-purpose flour
- 3 tablespoons powdered sugar
- 1/2 teaspoon paprika
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon chili powder
- 1/2 teaspoon baking powder
- 2 teaspoons cayenne pepper
Sauce
- 1/2 cup mayonnaise
- 1 teaspoon dijon mustard
- 3 teaspoons yellow mustard
- 2 tablespoons honey
- 2 teaspoons BBQ sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon lemon juice
Directions
- In a food storage bag, combine pickle juice, water, and chicken breasts. Marinate for 30 minutes.
- In a mixing bowl, combine breading ingredients and stir.
- In a mixing bowl, combine sauce ingredients and stir. Set aside.
- In a mixing bowl, combine egg wash and stir.
- Dip chicken breasts into egg wash, then breading. Coat all sides. Repeat.
- Fry chicken breasts in hot oil until it reaches an internal temperature of 165°F. Dry on paper towel.
- Toast buns in skillet, face-side down, until lightly browned.
- Assemble sandwiches, top with sauce, and serve!
