Ingredients
- 120 grams warm water
- 488 grams warm milk
- 720 grams all-purpose flour
- 2 teaspoons salt
- 14 grams yeast
- 25 grams sugar
- 27 grams vegetable oil
- egg wash (1 egg mixed with 15 grams of cold water)
Directions
- Combine and mix ingredients by hand, or use stand mixer.
- Rise. Punch down.
- Shape into 18 equal-sized balled. For hamburger buns, flatten into discs. For hot dog buns, role into cylinders.
- Place in pan. Allow second rise. Apply egg wash.
- Bake at 400°F for 20 minutes.
- Remove from oven and pan, then cool on wire rack.
