- 3 pound skinless pork belly
- 1/4 cup kosher salt
- 1/4 cup sugar
Directions
- Mix salt and sugar in a bowl.
- Rub pork belly with salt-and-sugar mixture, then place fat side up in roasting pan.
- Cover with plastic wrap and place in refrigerator overnight.
- The next day, discard any liquid that has accumulated in the container.
- Cook in oven at 450 degrees for 1 hour, basting with rendered fat at halfway point.
- Turn the oven temperature down to 250 degrees then cook for 1 hour.
- Remove from oven, wrap in aluminum foil and place in refrigerator until chilled and firm.
- Once chilled, cut into 1/2-inch thick slices; then warm for serving and use immediately.
