Ingredients
- 2 chicken breasts
- 1 bunch cilantro, chopped
- 1 jalapeño, diced
- 1 lime
- 3 tablespoons mayonnaise
- 1 tablespoon white vinegar
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon onion powder
- Pinch of salt
- Pinch of black pepper
Directions
- Zest 2 teaspoons lime, then wedge.
- Pat chicken breasts dry with paper towel. Season both sides with salt and black pepper.
- Combine paprika, cumin, onion powder, and white vinegar.
- Thoroughly coat both sides of the chicken with spice rub.
- Roast chicken in oven at 475 for 18-20 minutes.
- Combine mayonnaise, lime zest, cilantro, juice from lime wedges, jalapeño, salt, and black pepper.
- Serve sauce on side. Garnish chicken with cilantro leaves.
