- 6 ounces corn muffin mix
- 1/2 cup water
- 1 jalapeño pepper, seeded and diced
- 1 tablespoon olive oil
Directions
- In a mixing bowl, combine corn muffin mix, jalapeño, and water until a thick batter forms.
- Add olive oil to medium heat skillet.
- Add four 1/4 cup scoops of batter. Cook undisturbed until bubbles form on surface, 2-3 minutes.
- Gently flip, and cook until lightly browned, 2-3 minutes. Serve!

- Cover with Blueberry BBQ sauce.
