Ingredients
- 4 slices Benton's smoked bacon, chopped
- 3/4 cup onion, chopped
- 1/2 cup red sweet pepper, chopped
- 1/4 cup celery, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lbs Yukon gold potatoes, peeled and diced
- 4 cups chicken broth
- 3 cups corn kernels
- 1 cup heavy cream
- 1 teaspoon fresh thyme, chopped
Directions
- Saute bacon in pressure cooker or InstaPot until crisp, then remove and set aside.
- Add onion, sweet pepper, celery, garlic, salt, and black pepper. Cook for 3 to 5 minutes.
- Add potatoes and chicken broth. Use soup/broth setting on InstaPot, or pressure cook, for 1 hour.
- Release lid, add corn. Bring to simmer for 3 to 5 minutes.
- Remove from heat. Stir in cream and thyme. Season with salt and pepper. Serve topped with bacon.
