Ingredients
- 4 chicken breasts, skinless
- 1 head romaine lettuce
- 1 lemon, juiced
- 2 large eggs, hard-boiled
- 1/2 teaspoon black pepper
- 1/4 cup parmesan cheese, shredded
- 1 cup croutons
Dressing
- 2 cloves garlic
- 1/4 cup vegetable oil
- 1/4 cup parmesan cheese, grated
- 1 tablespoon Worcestershire sauce
- 1/4 teaspoon dry mustard
- 1/2 teaspoon salt
- 2 tablespoons lemon juice
Directions
- Combine dressing ingredients in blender and process until smooth.
- Broil chicken until juices run clear when cut with a knife, about 15 minutes. Cube and set aside.
- Tear lettuce into large pieces. Squeeze lemon juice over top, toss lightly.
- Peel and chop eggs. Add eggs, chicken, black pepper, and dressing to salad bowl. Toss lightly.
- Sprinkle shredded parmesan and croutons over salad. Serve!
