- Pressure Cooker or InstaPot
Ingredients
- 3 cans beef broth
- 2 cups red wine
- 5 teaspoons canola oil
- 1 pound beef stewing meat, trimmed and cubed
- 3 large potatoes, peeled and cubed
- 1 onion, peeled and chopped
- 5 sticks carrots, peeled and diced
- 2 sticks celery, diced
- 2 bay leaves
- 2 teaspoons salt
- 1/4 teaspoon black pepper
Directions
- Combine all ingredients in pressure cooker or InstaPot.
- Use soup/broth setting on InstaPot, or pressure cook, for 1 hour.
- Refrigerate over night to let the flavors meld, then reheat and serve!
Serving Suggestions
- In place of beef stewing meat, use leftover Reverse Sear Prime Rib
