Turkey-Stuffed Poblanos

Ingredients
- 3 poblano peppers, halved with seeds removed
- 1 pound ground turkey
- 1 red onion, peeled and diced
- 3 ounces corn kernels
- 1/4 ounces cilantro, minced
- 1 1/2 tablespoons chile and cumin rub
- 3 ounces chihuahua cheese, shredded
Directions
- Place poblanos cut side down on baking sheet. Spray each with cooking spray. Roast in oven at 400°F for 12 minutes.
- Heat skillet to medium, add olive oil and cook ground turkey until no pink remains, 8-10 minutes.
- Transfer turkey to a mixing bowl. Return skillet to medium-high heat, add onion and cook 4-5 minutes.
- Add corn, seasoning rub, cilantro, and salt. Stir until onion is tender, 2-3 minutes.
- Transfer to mixing bowl and combine with turkey. Stir ingredients together.
- Flip poblano peppers cut side up, and fill with mixture. Top with Chihuahua cheese.
- Roast in oven until cheese is melted, 8-10 minutes.
