Ingredients
- 1 tablespoon vegetable oil
- 1 large onion, diced
- 2 garlic cloves, minced
- 1 teaspoon plus 1 pinch salt
- 1/2 cup tomato paste
- 1 1/2 cups dry red wine
- 3 cups diced tomatoes
- 1 cup brown sugar
- 1 1/4 cup balsamic vinegar
- 2 tablespoons ground chipotle powder
- 1 whole ancho chili pepper
- 2 teaspoons smoked paprika
- 1 bay leaf
Directions
- Combine oil, onion, garlic and pinch salt in sauce pan over medium heat. Stir until onions are golden.
- Stir in tomato paste. Deglaze with red wine. Cook until reduced by half.
- Add remaining ingredients. Simmer over low heat for one hour, stirring occasionally.
- Remove bay leaf. Transfer sauce to blender and puree until smooth. Pass through tamis into bowl.
