Ingredients
- 2 cans (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) great northern beans, drained and rinsed
- 1 can (15 ounces) pinto beans, drained and rinsed
- 1 large yellow onion, large dice
- 1 green bell pepper, medium dice
- 2 cloves garlic, minced
- 1 cup Barbecue sauce
- 1 cup Ketchup
- 2 tablespoons yellow mustard
- 2 tablespoons brown sugar
- 1 tablespoon ancho chili powder
- 1/2 teaspoon red chili flakes
- 1/2 teaspoon Kosher salt
- 2 ounces apple cider vinegar
Directions
- Add tablespoon of oil to stock pot on low heat stove top, then sweat onions until translucent (~5 minutes).
- Increase heat to medium, and add color to onions (~5 minutes).
- Add green bell pepper to stock pot and saute (~5 minutes).
- Add garlic, red chili flakes, and ancho chili powder. Stir constantly for 30 seconds.
- Add BBQ sauce, ketchup, mustard, apple cider vinegar, brown sugar, and all of the beans. Mix well to combine. Turn the heat to low and cover. Stir occasionally for 15-20 minutes.
